Carpaccio-peppercorn seared rare beef tenderloin with shaved parmesan, arugula & olive oil

Porchetta - roasted pork tenderloin in a shiraz-fig reduction & back ribs "agro-dolce" in a Sicilian sweet and sour tomato sauce
Sea Bass - crispy seared filet over sauteed vegetables, topped with "vin cotto" & fried leeks
Beef Short Rib - slow roasted & served in its own reduced braising sauce of tomatoes, dark beer, beef stock & vegetables, served with a roasted root vegetable puree
